1 ½ lbs Flounder 2 fresh tomatoes (peeled / cut in eigths) 1 small onion (chopped) 1 garlic clove (pressed or chopped) ½ green pepper (grated) sea salt / pepper to taste generous pinch oregano ½ or ¼ cup white table wine ¼ cup melted butter | Arrange fillets in a single layer in a shallow baking dish. Tuck tomatoes around fish. Mix onion, garlic, green pepper and oregano. Mix wine and melted butter and baste over fish. Bake in 375° F oven for 25-30 mins. until fish is tender, basting occasionally. Sprinkle grated Parmesan cheese over fillets before serving. Serves: 4
