| | Grilled Mahi-Mahi Recipe | 1 ½ cups chopped fresh pineapple 1 small red bell pepper (coarsely chopped) ½ cup scallion (chopped) 1 or 2 jalapenos (minced) 3 tablespoons cilantro (chopped) 1 tablespoon fresh key lime juice ½ teaspoon sea salt ¼ teaspoon cayenne 1 tablespoon canola oil 2 lbs. Mahi-Mahi fillet (outstanding with grouper too!)
| In a bowl stir together pineapple, bell pepper, scallion, jalapenos, cilantro, lime juice, 1/4 teaspoon of salt. Let stand at room temperature for 1 hour. Once the fish has been rubbed with oil, salted with remaining 1/4 teaspoon and cayenne, it may be cooked over a medium hot barbeque grill for approximately 10 minutes until cooked through. Serves: 8
